Some dishes are not simply eaten — they are felt.
They carry the warmth of a fireplace, the scent of wood, and the quiet joy of a festive table.
This recipe was born from that very feeling: smoked tagliolini with black summer truffle and whisky-marinated pepper, a perfect harmony of taste, texture and aroma — an Experience Food signature for the holidays.
The inspiration
Every Christmas invites us to slow down and rediscover authentic pleasure. For us at Experience Food, this means blending memory and discovery, tradition and science.
- The smoked tagliolini by Chef Alajmo are the foundation — elegant, aromatic, with subtle notes of wood and warmth.
- They meet the black summer truffle from Tenuta San Pietro a Pettine (250 g), earthy and sensual,
-
and the whisky-marinated black pepper by Greenomic Delikatessen, which adds a gentle, smoky depth.
Three extraordinary ingredients, one refined experience.
Ingredients (serves 2)
- 200 g Smoked tagliolini by Chef Alajmo
- 40 g Butter
- 20 g Black summer truffle petals – Tenuta San Pietro a Pettine
- 30 g Parmigiano Reggiano (30 months)
- A pinch of Whisky-marinated black pepper – Greenomic Delikatessen
- Salt to taste
Preparation
- Bring salted water to a boil and cook the tagliolini for about 3 minutes.
- Meanwhile, melt the butter gently in a wide pan.
- Drain the pasta al dente and transfer it to the pan with a ladle of cooking water.
- Add the Parmigiano and toss until a smooth, creamy texture forms.
- Plate immediately, top with black truffle petals, and finish with a light grind of whisky pepper.
Sensory tip: open the truffle jar just before serving to release all its fragrance. Pair the dish with a glass of smoky whisky or a structured white wine for a perfect aromatic balance.
A Christmas story through taste
Serve it in a cozy setting, beside a fireplace, and let every bite tell a story of light, earth, and emotion.
Experience Food recommends
