Ingredients for 4 servings
- 250 g Smoked egg taglierini by Alajmo
- 0.1 g Pure CRU saffron (in threads)
- 1 tablespoon Red prawn grains “Sublìme” Rosso di Mazara
- 20 g butter
- A drizzle of delicate extra virgin olive oil
- Thar Desert salt, to taste
- (optional) a pinch of green Sichuan pepper powder for a fresh, citrusy finish
1️⃣ The Golden Infusion
Place the CRU saffron threads in 3 tablespoons of hot water and let them steep for about 30 minutes.
During this time, the water turns to gold, releasing notes of honey, hay, and earth — a concentrated warmth and light that will become the soul of the dish.
2️⃣ The Cooking
Bring the water to a boil with a pinch of Thar Desert salt.
Cook the Alajmo smoked egg taglierini for just a few minutes, keeping them al dente to preserve their silky texture and delicate smoky aroma.
3️⃣ The Mantecatura
In a pan, melt the butter and add the saffron infusion.
Add the taglierini and gently toss them with a drizzle of extra virgin olive oil and a spoonful of their cooking water.
Turn off the heat, add the “Sublìme” Rosso di Mazara red prawn grains, and let the warmth embrace them without cooking — this way, they release their natural marine sweetness.

Twirl the taglierini into a nest and place them on a light-colored plate.
