There is a common misconception when it comes to gourmet cooking: the belief that it requires complex techniques, hard-to-find ingredients, or the refined skills of a Michelin-starred restaurant.

However, the difference between an ordinary dinner and a memorable one lies elsewhere. It does not depend on difficulty, but on the choices made along the way.

Choice Over Complexity

A mindful gourmet dinner is built through subtraction, not accumulation.
In other words, it grows from intention rather than special effects.

For this reason, not everything needs to be the protagonist.

Too often, when we aim to “do something special,” we fall into the same trap: trying to impress with everything at once. The result is excess—complex dishes, competing flavors, ingredients all seeking attention at the same time.

By contrast, a well-considered dinner works precisely because every element has a defined role.

Within this balance, a first course may naturally take center stage.
At the same time, an appetizer can prepare the palate.
Meanwhile, a side dish can simply accompany, without needing to prove anything.

Thus, gourmet is not a performance.
It is, instead, a question of balance.

At its core, this approach rests on a simple truth: ingredients matter more than technique.

You may know a thousand recipes; still, if an ingredient lacks identity, technique will not create it.
On the contrary, the right ingredient—even when treated simply—is already capable of telling a story.

That story might begin with a carefully chosen grain.
It may continue through a seasoning that enhances rather than covers.
And it may be completed by a preserve that carries history, not just flavor.

For example, this same logic guides dishes that are essential yet complete, such as spaghetti made with ancient grains, lemon, caper bottarga, and Hawaiian black salt.
At first glance, the construction appears simple. In reality, it is carefully balanced, allowing each ingredient to exist without overlapping the others.

It means seasoning with restraint, rather than correcting compulsively.
