Gli Aironi Black Sake is the first 100% Italian sake entirely produced in Piedmont, resulting from a perfect fusion between the Vercelli rice fields and the art of Turin mixology. Obtained from the fermentation of “Penelope” black rice cultivated by Gli Aironi, a family-run business for five generations, this sake stands out for its 17% alcohol content and the unique contamination with botanicals typical of Turin vermouth, including artemisia and yarrow.

On the nose, there’s a fascinating olfactory complexity: notes of ripe banana and spices, along with aromatic nuances where vanilla, beer yeasts, and botanicals emerge. In the mouth, it is round, savory, and slightly bitter, but with a pleasant balance between umami and freshness, with a persistent aftertaste of licorice. Excellent to taste neat at 7°C or accompanied by ice, citrus zest, or as a base ingredient for sophisticated cocktails such as the “Mango Matter” created by Davide Pinto from the Affini bar in Turin.

Pairings: it pairs perfectly with fish, vegetables, light meats, or exotic preparations based on mango and curry. Also ideal as a natural digestif.

Producer: Gli Aironi is an agricultural company from Vercelli that has been cultivating rice using sustainable methods for over a century. The name comes from the grey herons, birds that have returned to populate the rice fields thanks to the reduction in the use of fertilizers. The same company produces Carnaroli rice, whole grain black rice, and gourmet creations.
