The red orange and rum marmalade “Aretusa” by Colle Vicario is a 100% Sicilian excellence. It combines the sweetness of late Ribera oranges with the character of rum. Each jar tells a story of tradition and craftsmanship.
Origin and Ingredients
The red oranges are hand-picked in January and February. They come from Colle Vicario’s lands, near Ribera. The recipe only includes citrus fruits, cane sugar, lemon juice, and 0.8% rum. There are no preservatives or artificial colors.
Production Method
The cooking process takes place at low temperature. Natural pectin ensures the right consistency. The fruit-to-sugar ratio is 65% per 100g of product. The result is a dense and glossy preserve.
Appearance and Aroma
The color varies from deep red to dark orange. When opening the jar, it releases a citrusy and slightly alcoholic aroma. The finely grated peels give it a pleasant texture.
Taste and Pairings
