Origin and Quality
Paolo Bove selects only the Aspersa Maxima species, with artisanal care. Specifically, the snails are hand-picked and immediately processed in a green sauce made with parsley, garlic, shallot, extra virgin olive oil, white wine, salt, and pepper. As a result, the product retains all the typical flavors of the region.

Ingredients for 2 people

180 g of egg tagliolini

1 jar (150 g) of Snails in Green Sauce

1 clove of garlic

Extra virgin olive oil, as needed

Chopped fresh parsley

Freshly ground black pepper
Instructions

Cook the tagliolini in plenty of salted water.

Meanwhile, heat a drizzle of oil with the crushed garlic; then add the snails and let them flavor for 2 minutes.

Drain the pasta al dente and sauté it in the pan with the sauce.

Finally, garnish with fresh parsley and pepper; at this point, serve immediately while hot.
Pairing Suggestions and Storage
Furthermore, you can accompany the Snails in Green Sauce with a glass of still white wine, preferably a Roero Arneis. For this reason, we recommend storing them in the refrigerator at 4°C and consuming them within 5 days of opening.
